For pastry:

For cheese filling:
2 1/2 pounds of cream cheese
14 ounces of sugar
3 tablespoons of plain flour
1 1/2 teaspoons of grated fresh orange rind
1 1/2 teaspoons of grated fresh lemon rind
1 1/4 teaspoon of vanilla essence
5 eggs
2 egg yolks
2 fluid ounces of double cream
