Anzac Cookies

Ingredients
1 cup plain flour
1 cup rolled oats
3/4 cup desiccated coconut
1 cup castor sugar
125g Australian butter
1 tablespoon golden syrup
1 1/2 teaspoons bicarbonate of soda
2 tablespoons boiling water
Method
1. Combine flour, oats, coconut and sugar.
2. Melt butter and golden syrup together over a gentle heat. Dissolve soda in the boiling water and add to the melted butter mixture. Stir into dry ingredients.
3. Allowing room for spreading, place tablespoons of mixture on buttered baking trays and flatten slightly with a fork. Bake at 180°C for 10-15 minutes until biscuits are golden brown. Allow to cool on a wire rack.
