Banana Nut Pancakes with Maple Syrup Yogurt
Serves 4
Ingredients
1 cup self raising flour
2 teaspoons cinnamon
2 eggs
2 cups Australian natural yogurt
2 bananas, mashed
1/4 cup chopped pecan nuts
30g Australian butter, melted
1 banana, extra, sliced
250g punnet strawberries, sliced
1 cup Australian natural yogurt, extra
2 tablespoons maple syrup
maple syrup, extra, for serving
Method
1.Combine flour and cinnamon. Add egg and gradually mix in yogurt to form a thick batter. Stir in mashed banana and pecan nuts.
2. Pour 1/4 cup mixture into a buttered and preheated non-stick frypan. Cook over low heat until bubbles begin to form on top. Turn and cook for a further 1-2 minutes or until golden. Repeat with remaining mixture.
3. Stack 3 pancakes each onto four serving plates. Top with sliced banana and strawberries. Whisk the extra yogurt and maple syrup together and serve over pancakes. Drizzle with extra maple syrup to serve.
