一、Chocolate Mousse(巧克力慕斯)

Ingredients(原料):

380g Whipping cream
380g Milk
210g Trimoline
3pcs Vanilla bean cut into 2 pieces
380g Egg yolk
1000g Dark chocolate 70% chopped

Method(制作方法):

1. Boil together the cream, milk, trimoline and the vanilla bean in a saucepan.
2. Pour over the egg yolk and boil to reach 85C.
3. Then add to dark chocolate and mix well.
4. Finally, fold in whipped cream.

二、Olive Oil Sponge Cake(橄榄油海绵蛋糕)

Ingredients(原料)

600g Egg
1100g Caster sugar
750g Milk
1000g Cake flour
250g Almond powder
40g Bakinf powder
60g Olive oil
1pc Lemon rind
1tsp Ground cinnamon

Method(制作方法)

1. Sieve all dry ingredients well.
2. Whisk egg with sugar until thick, add in milk and fold in ckae flour.
3. Then fold in olive oil, lemon rind and cinnamon thoroughly.
4. Pour into lined mould and bake at pre-heated oven at 200C for 10-12 minutes.

三、Vanilla CreamI

ngredients(原料):

1500g Whipping cream
325g Caster sugar
4pcs Vanilla bean. cut inot 2 pieces
390g Egg yolk
16g/8pcs Gelatine sheet, soaked

Method(制作方法)
1. Bring cream, sugar and vanilla bean to a boil.
2. Pur over the egg yolk ad boil again to 85C, add in the soften gelatine and mix well.
3. Pour into mould and freeze in freezer for later use.

Assembly(组装):

1. Put the sponge cake at the bottom of the mould.
2. Brushed liqueur of your choice onto the surface of the cake(Optional)
3. Pipe a layer of chocolate mousse on top and put the vanilla cream in the middle.
4. Then cover with the rest of the chocolate mousse.
5. Finally, pour with chocolate glaze.
